There's nothing quite like a perfectly fudgy brownie — dense, moist, crackly on top, and deeply chocolatey. And if you're using compound chocolate, you're in for a treat: it's forgiving, no-temper-needed, and delivers incredible flavour.
Why Use Compound Chocolate for Brownies?
Compound chocolate uses vegetable fats instead of cocoa butter, which means it melts smoothly, doesn't require tempering, and gives your brownies a rich, consistent chocolate flavour. It's the go-to choice for home bakers and professionals who want reliable results every time. Browse our Chocolates collection to pick your favourite compound variety.
Ingredients
- 200g compound dark chocolate, chopped
- 150g unsalted butter
- 200g caster sugar
- 3 large eggs
- 1 tsp vanilla extract
- 80g all-purpose flour
- 30g cocoa powder
- ½ tsp salt
- 100g compound chocolate chips (optional, for extra fudginess)
Method
- Preheat your oven to 175°C (350°F). Grease and line a 20x20 cm square baking tin.
- Melt the chopped compound chocolate and butter together over a double boiler or in the microwave in 30-second bursts. Stir until smooth and let it cool slightly.
- Whisk the sugar into the chocolate mixture, then beat in the eggs one at a time. Add vanilla extract.
- Fold in the flour, cocoa powder, and salt until just combined. Don't overmix — this keeps the brownies fudgy.
- Add chocolate chips if using, then pour the batter into your prepared tin.
- Bake for 22–25 minutes. A toothpick inserted in the centre should come out with moist crumbs (not clean — that's the fudgy sweet spot!).
- Cool completely in the tin before slicing for the cleanest cuts.
Tips for the Fudgiest Brownies
- Don't overbake: Pull them out when the centre still looks slightly underdone. They continue to set as they cool.
- Use room-temperature eggs: They incorporate better and give a smoother batter.
- Chill before slicing: Pop them in the fridge for 30 minutes after cooling for clean, sharp edges.
- Quality chocolate matters: The better your compound chocolate, the richer your brownies.
